Shurpa is one of my favorites, something I grew up eating.
It is similar to a beef stew and is very simple to make with lots of flavors.
It is well known in central Asia. There's many different kind of shurpas,
this one is slow cooked so the meat and all the vegetables absorb all of
the delicious flavors.
1-2 lbs of beef cubed
2 onions sliced
5 carrots julienne cut
6 potatoes peeled and cut into 4s
1 can tomato sauce
1/4 cup oil
7 cups of water
2 tsp salt
1 tsp pepper
2 tsp cumin
1 tsp seasoning salt
Pour the oil into a dutch oven pot and let the oil get hot.
When the oil is hot add in the beef and let cook on high heat.
Add in the onions and continue cooking on high heat.
Saute the onions for about 1-2 minutes.
Add in your seasonings....
Add in the carrots and let cook for another 1-2 minutes.
Turn the heat down to medium heat.
Add in the potatoes and let cook for a couple minutes.
Add in all of the water and the tomato sauce.
Turn to low heat and cook until the potatoes are fully cooked.
