Pickle Soup (Rassolnik)

Pickle Soup (Rassolnik)




1/3 cups rice

2 medium size potatoes pealed and cubed

1 pickle shredded
1/2 of an onion diced
1 carrot shredded
1/4 cup tomato sauce + 1/4 of a cup water
1/2 lb of pork meat





Put the potatoes to boil with the pork
Fill the pot up almost full with water


Meanwhile dice the onions and shred the carrots and the pickle


As soon as the potatoes and the pork is fully cooks add in the rice


In a separate pan saute the onions and then add the carrots 



Add in the water and the tomato sauce
then add in the pickle


When the rice is almost done cooking, add in the tomato mixture into the soup
Let the soup simmer until the rice is fully done.


Take out the pork and cut it up or shred it into small pieces


Season the soup to taste. Salt and pepper.
You can also add any fresh herbs. I used Dill (my favorite) 


After adding any herbs, let the soup simmer 
for another five minutes.
