Tiramisu


This is one of my favorite cakes. I got this recipe from my mom and it is probably the best cake I have tasted yet. Tiramisu in Italian literally means "pick me up". This cake is a rich treat with the bold flavors of cocoa powder and the espresso with savory mascarpone cheese and a coffee liquor, layered with the lady finger biscuits. It is very easy to make and you'll have it done in no time. It doesn't need any baking, just make the cream and assemble. It is best when refrigerated over night. The lady fingers absorb the coffee liquor mixture and the delicate cream.I hope you try it out and enjoy.



What you need for the mascarpone cream:
6 egg yolks
5 tablespoons of sugar
2 tablespoons of liquor
1 8 oz tub of mascarpone cheese
6 egg whites
4 tablespoons of sugar

What you need for the cream frosting:
1 pint of heavy cream
3/4 of a can of sweetened condensed milk

Others:
2 packs of 24 lady fingers total of 48
6 shots of espresso coffee
3 tablespoons of coffee liquor
2 tablespoons of cocoa powder



Start by separating the egg whites from the egg yolks. Beat the egg whites until they are foamy. Add in the sugar slowly and beat them until stiff peaks. 




Transfer the egg whites to a different bowl or just use a clean bowl to mix the rest of the ingredients.
Start mixing the egg yolks and the sugar until pale in color.
Add in the coffee liquor and mascarpone cream. Fold in the egg 
whites, when all is mixed well place into the fridge to let cool down.





Start with the other cream. Mix the cold heavy cream using a mixer. When the cream starts getting to stiff peaks add in the sweetened condensed milk and let mix for about 1-2 minutes.


In a bowl combine the coffee and the liquor.
Dip the lady finger one at a time and place them into a 
baking pan or a deep dish.



Top the first layer with the mascarpone cream and then top it off with 
a thick layer of the heavy whipping cream. Just the top with some cocoa
powder and repeat the steps.



Refrigerate over night.
