Potato pancakes... MMM. If you have left over potatoes this recipe is perfect.
You need only a few ingredients. It is super easy to make.
They are so good with some sour cream. You can have them any time of the day.

What you need:
2 cups of left over mashed potatoes
1 cup of flour
1/2 cup of mozzarella cheese
1/4 of a cup of parsley
Combine the mashed potatoes, egg, and flour.
Mix very well.
Add in the cheese and parsley.
Add any seasoning that you prefer. I added in a pinch
of pepper. 1/4 tsp of seasoning salt and 1/4 tsp of garlic powder.
Pre-heat some oil on the stove so it can be hot.
Then lower the temperature on low. Scoop some potatoes
into your hand. Roll them into a ball and flatten them out.
Place them into the pan and let fry for about 5-7 minutes
on each side or until they are golden brown.
Let them cool down and eat them with some sour cream.
