Zucchini Bites


These zucchini bites are off the charts! You will not be able to stop eating them... at least I couldn't. :) They are perfectly crunchy on the outside and pairs great with a cool garlic sauce. My mother-in-law gave me a whole bunch of zucchini fresh from her garden, so I had to think of something. These are so easy to make and trust me you will not regret making them. My husband isn't big on zucchini, but he said I have been missing out my whole life. Continue reading to learn how to make them. Enjoy! 



What you need:

2 medium size zucchini or 1 large one
1 package of club crackers or Ritz crackers about 1 cup(can also use any bread crumbs)
1 egg + 2 tablespoons of water 
1/3 cup of flour
1/2 teaspoon salt, pepper,seasoning salt,garlic powder, and onion powder


Place the crackers into a food possessor and blend them to a fine crumb. Place it into a bowl or onto a disposable bag. ( For easier clean up) Combine all the seasoning with the flour and place it onto a different disposable bag, or a bowl. And whisk the egg and water. Add a small pinch of salt to the egg and the cracker. Its important to season every layer.



Slice the zucchini and dip it into the flour, then the egg, and the cracker crumbs.



 

Preheat a pan on high heat and add oil to it. Before placing the zucchini into the frying pan, lower the heat to medium. Fry them to a golden color about 2-3 minutes per side. Take them out and place onto a plate with napkin. Let cool for about 10 minutes and they are ready to eat.
