Delicious Pancakes


Breakfast is a great way to start of your day. I absolutely love breakfast! I think it's the best part of the day and the most important meal as well. So... start off your day right with these simple and fluffy pancakes. :) I always struggle finding a good pancake recipe. They are usually really thin, but this pancake recipe works great. Read on to learn how to make them. 



What you need:

This recipe makes about 5-6 medium pancakes

2 cups + 2 tbsp of flour
2 tbsp of sugar
1 egg
2 egg whites
2 tbsp of melted butter or oil
1 tbsp of baking powder
1/2 tsp of baking soda
1 tsp of vanilla


Combine the sugar, vanilla, and 1 egg. Mix until well incorporated. Add in the butter, salt, and the milk.

 

Separate the 2 eggs. 


Using a sifter, combine the flour, baking powder, and the baking soda. Sift the dry ingredients into the wet ingredients. Mix until everything is incorporated. Place into the fridge for about 10 minutes and let it rest.

 
 

Whisk the egg whites until stiff peaks form. Add the egg whites and fold them into the pancake mixture. 

 
 

Heat a pan on high and lightly spray the pan with oil. Before pouring the pancake batter onto the pan, turn the heat down to medium. Using a ladle, pour into the pan and cook until the pancake has little bubbles on top, about 3-4 minutes. Flip the pancake over and cook for a few more minutes. Remove from pan. Add butter and maple syrup to taste.
