Breakfast is a great way to start of your day, I absolutely love breakfast. I think its the best part of the day and the most important meal as well. So... start off your day right with this simple and fluffy pancakes. :) I struggled finding a good pancake recipe, they were usually really thin, but these pancake recipe works great. Read on to learn how to make them.
What you need:
This recipe makes about 5-6 medium pancakes
2 cups of flour plus 2 tablespoons
2 tablespoons of sugar
1 egg and 2 egg whites
2 tablespoon of melted butter or oil
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1 teaspoon of vanilla
Combine the sugar, vanilla, and 1 egg. Mix until well incorporated. Add in the butter, salt, and the milk.
Separate the 2 eggs.
Using a sifter combine the flour, baking powder, and the baking soda and sift through into the wet ingredients. Mix until everything is incorporated. Place into the fridge for about 10 minutes and let it rest.
Whisk the egg whites until stiff peaks. Add the egg whites and fold them into the pancake mixture.
Heat a pan on high and lightly spray the pan with oil. Before pouring the pancake onto the pan turn the heat down to medium. Using a ladle, pour onto the pan and cook until the pancake has little bubbles on top. about 3-4 minutes.
