Marinated Bell Pepper and Mushroom Salad
I absolutely love this salad. It is something that I grew up eating. It is so simple to make with just a few ingredients marinated in an Italian dressing. The mushrooms soak up the dressing and they pair very well with the bell pepper and onion combination. It is a great fresh addition to any meal. Read on to learn how to make it. Enjoy!
What you need:
2 bell peppers, sliced
1/2 of a medium onion, thinly sliced
7 mushrooms, cut into 1/4s
What you need for the Italian dressing:
Salt/pepper
1 garlic clove minced
1 tbsp dill
3 tsp olive oil
2 tbsp lemon juice
2 tbsp of vinegar
1/2 tsp of oregano
1/2 tsp seasoning salt
1/2 tsp of Tuscan seasoning or Italian seasoning
Start by boiling the mushrooms for about 5-10 minutes. Slice up the onions and the bell peppers. Combine the mushrooms, onions, dill, and bell peppers in medium size bowl. Add about a pinch of salt and pepper to the mixture.
Combine the seasoning, olive oil, lemon juice, vinegar, and the garlic in a small mason jar. Close the mason jar and shake until everything is well combined. Pour the vinegar over the vegetable and give it all a good mix. Cover with plastic wrap and let it stay in the fridge for a couple of hours. Enjoy!
