Zucchini Bites
These zucchini bites are off the charts! You will not be able to stop eating them... at least I couldn't. :) They are perfectly crunchy on the outside and pair great with a cool garlic sauce. My mother-in-law gave me a whole bunch of zucchini fresh from her garden, so I had to think of something. These are so easy to make and trust me you will not regret making them. What you need:
2 medium size zucchini or 1 large one
1 package of club crackers or Ritz crackers about 1 cup (can also use any bread crumbs)
1 egg + 2 tbsp of water
1/3 cup of flour
1/2 tsp salt
1/2 tsp pepper
1/2 tsp seasoning salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pepper

1/2 tsp onion powder
Place the crackers into a food processor and blend them to a fine crumb. Place them into a bowl or into a disposable bag (for easier clean up). Combine all the seasonings with the flour and place the mix into a different disposable bag or a bowl. Whisk the egg and water in a separate bowl. Add a small pinch of salt to the egg mix and the cracker mix. It's important to season every layer.
Slice the zucchini and dip it into the flour, then the egg, and the cracker crumbs.
Preheat a pan on high heat and add oil to it. Before placing the zucchini into the frying pan, lower the heat to medium. Fry them to a golden color about 2-3 minutes per side. Take them out and place onto a plate with napkin, letting the napkin soak in some of the oils. Let cool for about 10 minutes and they are ready to eat.
