Honey Cake (Medovik)
1 stick margarine
1 cup sugar
4 tablespoons honey (more if preferred)
3 1/2 cups of flour
1 1/2 lbs of sour creams
2 cups of sugar
1 teaspoon of baking soda
2 eggs
parchment paper
melt the honey, margarine, and sugar
make sure to keep the heat on low
Wisk in the eggs, make sure you don't cook them.
Keep the temperature on low.
After the eggs are mixed in, add the baking soda.
the mixture will rise just a little and turn a lighter color
Add the mixture into the flour and mix well
Form the dough into a ball and wrap in plastic wrap and put into
refrigerator for an hour
Take off the plastic wrap and cut chucks of dough and roll into balls
preheat the oven to 365 degrees F
Sprinkle some flour onto a piece of parchment paper and place the dough on top
flatten the dough with your hand a little
Stark rolling it out for about 1 cm thickness
Place a lid over the dough to make a perfect circle
Take off the excess dough and roll into a ball and set aside
using a fork pork little holes in the dough
bake for 7 min and let cool, after taking it out of the oven let cool.
when cooled take of the parchment paper and let sit
for the frosting use 1 1/5 lb of sour cream and 2 cups of sugar
whip it together for about 5 min
its ok if the cream will be a little runny
place one layer at a time and frost. Use a thick about of frosting for the cake to be moist.
Leave one extra layer.
Crumble the extra layer with a roller, or a blender
Sprinkle over the top of the cake and on the sides
